Regional Foods
Is there anyone who doesn't like to eat a good meal? Thanks to the fast-food habit that has rapidly increased in recent years, we have almost forgotten all traditional flavors. Who remembers the most famous dish or product of their region right now? What was their hometown famous for? For example, there is the İspir district of Erzurum, have you ever eaten İspir beans? Do you know its taste, or Kayseri's manti, Adana's kebab, Balıkesir's höşmerim, Aydın's yuvarlama, Konya's etli ekmek (it's a closed but differently cooked form of pide, it's very delicious) or have you eaten etli topalak? I can hear you saying no.
I am of the opinion that these tastes should be learned as soon as possible, tasted, and passed on to future generations. Because our food and drink culture, like our customs and traditions, is followed with interest by the whole world. If we cannot protect what is ours, countries like Greece will come and patent our baklava, claiming it as the recipe of my ancestors.
Speaking of baklava, an Antep baklava, or pistachio wrap after the meal would be the perfect finale.
Without straying too far from the topic, I want to emphasize this to you. Food is a culture, and it is not something that can be formed instantly. Let's protect our regional flavors. Just as we have received nature as a trust from our children, we are obliged to leave our food culture, along with the traditions and customs entrusted to us by our ancestors, to our children. Because our palate is also one of the factors that make us who we are.
